Would YOU quit your job for YouTube? Why/why not?
I'm a SAHM so...I kind of can't quit Image BUT, if I had a job that wasn't being a SAHM, I wouldn't quit it for YouTube.

Should YouTubers quit? Why/why not?
Nope. Keep your jobs. The money and "stability" (what a joke) is never guaranteed, and neither is your place with your job if you happen to quit. Too much of a gamble. As seen with the Nulls, one stupid mistake can make your popularity (thus views, thus money) plummet like a stock market crash. I would say I want this to happen to a certain family with a "pop star" dad and a SAHM, but there are two boys involved and I can't wish ill upon them, even if one is a ridiculously spoiled child.

I think that I'd certainly not be busting my ass working 2 retail jobs like I do now. I'd still work but I would treat it as a second income not my sole income.

I think once they're to a certain following then yes they should quit their day jobs. Usually by that point they have so many side projects it makes sense. Like can you imagine PewDiePie working a 9-5 job like normal ppl? Or even ShayCarl? I'm sure you see my point.

Right now I'm in college, but once I start working it depends on how much I love my job I guess. I would love to stay at home all day with my family, but the reality is that YouTube is fickle and the money can come and go easily.

Being the realist I am, I would probably still work and invest the money somewhere I could use it later. Then I could still use my current income to support my family and keep my YouTube income on the side just in case of emergency.

As for if YouTubers should quit, I think it depends on what kind of content they produce. I don't think family vloggers need to be quitting their day jobs. They have easy to make videos and family vlogging is really only appealing to a select audience.

On the other hand, you have YouTubers who make quality content. Ryan Higa from NigaHiga said one of his videos could take weeks to shoot/edit. I couldn't imagine doing that and trying to hold down a job. Plus his content is interesting and funny for a broader audience. It's humor, not a weird hobby of watching other people run to the store. So, YouTubers making original and quality content could probably quit safely because their videos probably benefit from having their full attention.
